California Living ® shares sneak preview of Aloha Diet Roasted Balsamic Cherry Tomatoes Recipe – one of the signature, healthy and delicious foods to enjoy on the Aloha Diet Hummus Platter – recently featured by Party Girl Diet™ author and Aloha Diet creator Aprilanne Hurley.

Aloha Diet Balsamic Roasted Cherry Tomatoes
2-4 cups grape or cherry tomatoes
4 tablespoons olive oil
2 tablespoons balsamic vinegar
1/2 tsp. ground powdered ginger
1/2 teaspoon Hawaiian Red Alaea Sea Salt (Or coarse sea salt)
1/2 teaspoon black pepper
15 – 20 fresh basil leaves chopped or julienned (Optional)
Preheat oven to 425 degrees.
Place tomatoes in large mixing bowl, add olive oil , ginger powder, and 1/2 the sea salt and fresh cracked black pepper to coat. (You can skip the mixing bowl step and toss everything right on the baking sheet.)
Transfer coated cherry tomatoes to baking sheet.
Drizzle with remaining olive oil, sea salt and pepper, toss gently.
Bake cherry tomatoes for approximately 15 – 20 minutes or until tomatoes burst and begin to caramelize.
Transfer to serving dish or platter and sprinkle with an additional pinch of sea salt, coarse black pepper, and optional fresh chopped or julienned basil leaves.
Entertaining Tip: For an extra special presentation, heat 2 tablespoons of Balsamic Vinegar in a small saucepan, stirring frequently until vinegar is slightly thickened, about 5 minutes.
Toss the tomatoes with the basil.
Drizzle some of the thickened balsamic reduction sauce over the Aloha Diet Roasted Balsamic Tomatoes before serving.
Aloha Diet Roasted Balsamic Cherry Tomatoes are so ono (delicious) served warm or at room temperature.
